Figgy Cardamom French Toast
There are a few things in this world that I’m obsessed with: chapstick, burrata, palo santo, and, cardamom. Anytime I see cardamom listed as an ingredient on a menu, I’m likely going to order that item. So when I was going about making French toast one morning, it suddenly dawned on me that it could be even better with cardamom. And… I was right :) When I made this, figs were in season and I had a few from a tree in the neighborhood, but you can substitute with any fruit of your choice.
INGREDIENTS
2-3 slices of bread (Brioche is ideal, but use whatever you have on-hand)
1 egg
1/4 cup of milk
1 tablespoon sugar
1/2 teaspoon cardamom
1/2 teaspoon vanilla
Zest of half an orange
1 tablespoon butter
3 figs, sliced lengthwise
Powdered sugar, if desired
PREPARATION
In a wide, shallow bowl, combine egg, milk, sugar, cardamom, vanilla, and zest. Dip bread into bowl and let the bread absorb the egg mixture. Turn over to ensure other side is coated.
While the bread is sitting, heat a nonstick skillet over medium low heat. Melt the butter, on the skillet, and arrange each bread slice after it’s coated in the egg mixture. Cook slices until golden brown, about 5-10 minutes per side.
When the second side of the bread is a few minutes from being done, add the sliced figs (make sure the skillet is still buttered; if needed, add more) and heat for 1-2 minutes on each side.
Move French toast to a plate, top with figs, and sprinkle with powdered sugar, if desired. Bon appetit!
